Recipe of Cherry compote is one of my favorites. I especially like it cold, from the fridge, but I don't refuse it even in winter, at room temperature. I like it just as much sour cherry jam, one of the sweets of my childhood. There is nothing complicated in making this recipe. We obviously need cherries, water and something sweetener. I chose not to use sugar and replaced it with honey, but you can put any kind of sweetener, even sugar if you prefer. If you want, you can even not sweeten it at all, if you like sour compotes.

To make cherry compote, we must first put the cherries in jars. You can fill the jars in three quarters or even half, if you want to have more juice. Fill the jars with water then empty the water into a container to know exactly how much you need and to be able to sweeten it to taste. As I told you, I sweetened the water with honey, but any kind of sweetener you want to use is good. You can add white or unrefined sugar, agave syrup or any other sweetener you want. Fill the compote jars back, squeeze them well and put them in a pan to boil.
