  • 180 gr butter
  • a pinch of salt
  • 180 gr raw sugar
  • 2 eggs
  • 2 lg black cocoa
  • 250 gr flour
  • 1 vrg lgta baking soda
  • 1 sachet baking powder (10 gr)
  • 120 ml coffee (you can use sweetened to taste, I left it black)
  • 200 gr of sour cream
  • 1 lgta cinnamon
  • 1/2 lgta cardamom
  • coffee sauce:
  • 100 ml of coffee
  • 150 gr milk / dark chocolate
  • 200 gr pecan core (lightly baked)

The ingredients are kept at room temperature for at least one hour before preparing the composition.

In a bowl, froth the butter with a pinch of salt and raw sugar. Add the eggs one at a time, mixing well until smooth after each one. Add the spices and mix.

Note: Fatty compositions, based on butter and eggs, require extra attention because not mixing well the mixture between eggs and butter, the cake will not grow fluffy and the recipe will not succeed, so make sure you follow this step. The composition must be fluffy, frothy and homogeneous.

Separately, incorporate the coffee into the cream, and sift the flour with the cocoa, baking soda and baking powder.
Over the butter composition, add a quarter of the amount of flour, then half of the cream with coffee, another quarter of the flour, the rest of the cream and finally the rest of the flour.
Prepare a tray with baking paper, pour the composition, level it lightly, then bake in the preheated oven at 180 degrees C for about an hour.
After baking, turn off the heat, leave for 2-3 minutes in the oven, then take out on a kitchen grill and let it cool completely.

Caution: Do not cut hot, otherwise you risk cracking instantly. Wait for it to cool completely before serving.

Put it on low heat again until the sugar dissolves, then let it cool. In a non-stick bowl put the rest of the sugar, the starch and mix the dry ingredients a little, then gradually pour the coffee, the rest of the water and bring to a boil over low heat, stirring in the cream until it thickens well.

Put the ness in the hot cream and then let it cool. When it has cooled, gradually add the diced margarine, mixing the cream until incorporated. Then spread the cream between the sheets. It is pressed and garnished with powdered sugar combined with ness or ground walnuts.

Fasting cake with burnt sugar sheets and coffee cream is served after the sheets have softened.

Semolina cake - Fasting

The semolina cake - the fasting recipe - is the delicacy I propose to you for the period when you give up eggs and milk.

It is very easy to make, with ingredients that you can buy from any supermarket, but you can also buy them online if you stay at the office for too long.

My cake will make you think of oriental cakes (initially I was going to prepare Basbousa), but it's just a simple cake without eggs, milk or yogurt, but just as tasty and flavorful. But it's as sweet as those cakes!

It does not need orange water or rose water, we have prepared it so that we have the aroma of lamiae easy to make in the syrup that will turn the cake into something very good.

We can add a little lemon essence at the end, depending on tastes, taking care not to overdo the flavor.

Pour the dough into the pan and draw the future cake cubes. I recommend baking paper only on the edges, the bottom of the tray will be lined with oil and flour. Bake the cake in the preheated oven at 180 ° C for 30 minutes, or until it turns golden and hardens on the surface. 5 minutes before removing the cake, boil the water syrup with sugar. Let it boil over medium heat for 4 minutes, add the lamiae juice and lamiae peel and boil for another minute.

Meanwhile, take the cake out of the oven and cut the cubes following the drawing made before baking. Gradually pour the hot syrup over the hot cake with a small polish, taking care not to leave a portion of it without it getting wet. We put a little coconut on the cake cubes.

Remove the cake from the pan when it has cooled and arrange it on a plate.
